"Environmental Sustainability - 20% of the Marks available for Quality
Tenderers are required to demonstrate how they will operate the café concession in an environmentally sustainable manner.
Responses must address:
- Waste Reduction: measures to reduce waste and minimise the use of single-use products and packaging.
- Segregation: Arrangements for the segregation and recycling of waste.
- Local Sourcing; proposals for sourcing local, seasonal or sustainably produced food, beverages and consumables.
- Staff Training: measures to promote staff awareness of sustainable operating practices.
Tenderers must achieve minimum marks and failure to do so will result in exclusion."
